- 1 bunch of sukuma wiki (collard greens), washed and chopped
- 1/2 pound (about 250g) of beef or goat meat, cut into small pieces
- 1 medium onion, finely chopped
- 2 ripe tomatoes, chopped
- 2 cloves of garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Salt to taste
- 2 tablespoons vegetable oil
- Water for cooking
Instructions:
- Prepare the Meat:
- Clean and cut the meat into small, bite-sized pieces.
- In a bowl, season the meat with cayenne pepper, ground coriander, ground cumin, and a pinch of salt. Mix well to coat the meat with the spices.
- Sauté the Meat:
- In a large skillet or pan, heat the vegetable oil over medium heat.
- Add the seasoned meat to the pan and cook until browned on all sides. Remove the meat from the pan and set it aside.
- Sauté the Aromatics:
- In the same pan, add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic and ginger to the pan and sauté for another minute until fragrant.
- Add Tomatoes and Spices:
- Add the chopped tomatoes to the pan and cook until they soften and release their juices.
- Stir in the remaining spices – cayenne pepper, ground coriander, and ground cumin. Mix well to combine.
- Add the Meat Back:
- Return the cooked meat to the pan and stir to coat it with the tomato and spice mixture.
- Cook the Collard Greens:
- Add the chopped collard greens (sukuma wiki) to the pan. The greens will wilt down as they cook.
- Add a splash of water to the pan to create steam. Cover the pan with a lid and let the collard greens cook for about 10-15 minutes, or until they are tender.
- Adjust Seasoning and Serve:
- Taste the sukuma wiki and meat mixture and adjust the seasoning with salt if needed.
- Once the collard greens are cooked to your desired tenderness, remove the pan from heat.
- Serve:
- Serve the sukuma wiki with meat hot as a main dish. It’s often enjoyed with side dishes like ugali (maize porridge), chapati, or rice.
Tips:
- You can use any other leafy greens if sukuma wiki is not available. Kale or Swiss chard make good alternatives.
